Their are only a few people worldwide who master this art. The fine people of Cafe Vivace (on East Denny and Broadway, Capitol Hill neighborhood, Seattle) and a successful apprentice who now works at Urban Espresso (Botersloot, Rotterdam, The Netherlands).
